The recipe for our Wild Venison and Free Range Pork sausages has taken decades to perfect. Our first attempts in the keeper’s cottage in Scotland were full of best intentions and strong flavours. Wine, Stilton, Cranberry and 100% Venison combined with inspiration gained from the countryside in which we lived. However, a combination of time and experience lead us to understand what makes a great sausage, and more importantly what the consumer enjoys.
The recipe is actually remarkably simple! The natural hog casings (the traditional sausage casing) are filled with the perfect balance of fresh Wild Venison and Free Range Pork, seasoned in a way to let the natural flavours shine through. That’s it. Increasingly important today, they are gluten free.
Dartmoor Wild Venison has the most amazing flavour, but contains little fat, but when blended carefully with a little Free Range Pork together they produce a sausage that is simply stunning either for breakfast or on the BBQ.
All our Wild Venison is prepared fresh by us here on Dartmoor on the day of dispatch when it is packed in eco safe boxes prior to nationwide delivery.
